Super Yummy Versatile Skinny Muffins
 
 
A really tasty, yet healthy, snack that can be made with almost any ingredients you have on hand. They are great fresh out of the oven, or can be made ahead and frozen.

Ingredients
  • 1 1/1 cups whole wheat flour
  • 1¼ cups oats
  • 1 teaspoon baking powder
  • 1½ teaspoons baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup unsweetened applesauce
  • ½ cup low-fat buttermilk
  • ½ cup firmly packed brown sugar
  • 2 tablespoons cooking oil
  • 1 large egg, beaten
  • 1½ teaspoons vanilla extract
  • 1 cup blueberries
Instructions
  1. Preheat oven to 375 degrees F.
  2. Grease or line muffin pans.
  3. In a large bowl, combine whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
  4. In a medium bowl combine applesauce, buttermilk, brown sugar, oil, egg, and vanilla.
  5. Mix wet ingredients into dry, then fold in blueberries.
  6. Divide evenly into 12 muffin cups.
  7. Bake for 20-22 minutes. Enjoy!
